Chef’s unique twist on roast potatoes makes them perfectly crispy every time

A chef has sent foodies into meltdown with his innovative take on roast potatoes.

Mike, who runs popular TikTok page @meatlikemike, shared the “best way” to make crispy roasted potatoes to his 450,000 followers last week.

Unlike normal recipes, Mike suggests using smaller potatoes such as Jersey Royals. He starts by boiling the tatties in salted water before they become “fork tender”.

The next step is to drench the potatoes in olive oil, salt, pepper, onion powder, garlic powder, crushed red pepper, fresh basil, fresh thyme and mix it all together.

He then places them on a tray lined with baking paper before revealing the secret tip.

Mike uses a glass to smash each potato to a rough thickness of half an inch.

All that is left is to pop the tatties into a 215C oven for 30 minutes, making sure to flip them halfway through.

“You’re going to end up with a soft interior, crispy exterior – the best roasted potatoes you’ve ever had,” he finished.

The video has already been seen a whopping 11 million times and attracted thousands of comments.

“I make these too,” one said. “And I just use a fork to smash them. Works the same and they are always a hit.”

Another commented: “I want to make these. Look so bomb to me.”

A third said: “I’m now craving roasted potatoes at 8 in the morning.”

But one food fan offered a suggestion to make the recipe even better, saying: “If you add baking soda to the boiling water, they get even crispier on the outside.”

Others claimed the recipe didn’t actually produce “roasting potatoes”, with one writing: “They look more like crisps or as you would say chips. Roast potatoes are much larger and have at least 3 or 4 edges.”
